It’s Almost June
Well, it’s almost June, where did the time go? Actually, it seemed like a long spring for me, with the cool weather… I was so pre-occupied with other things that I almost waited too long to start my summer garden.
Just Had To Force Myself
I finally forced myself to get outside and at least plant some okra seeds,,, One thing lead to another, I ended up planting things that might not make it, but I thought it was worth a try… Like Green Beans, Kale, and Spinach. I also planted Sunflowers and Cantaloupe not sure about the Cantaloupe but think that the Sunflowers may survive…. We will soon find out…
If Nothing Else
If nothing else Okra will grow here in the summer heat… And I have learned to love it.. I never really hated it just never got used to eating it, until learning to grow it. I like it so much that I don’t want to live without it.
They freeze well too…just wash them, cut them and place them on a cookie sheet and freeze. When they are frozen put them into a freezer container in your freezer, very easy. So the more we can grow the better.
Okra Vegetable Stew
Making a stew with Okra is very satisfying… An old friend taught me to make a dish called FuFu in Africa, she made it with Corned beef, Okra, Mustard Greens, Tomatoes, Onions & Garlic… Over the year’s I have adapted it to fit my tastes. I like to add Black Beans, and Corn… For some reason, the combination is very filling and satisfying.
It’s Not Too Late To Plant Some Things
Okra is not the only vegetable that will grow well here in the summer, I have had success growing; Basil, Hot Peppers, Sweet Potatoes, Luffa & and of course Moringa.
There Must Be More
I tried Egyptian or Malabar Spinach once but didn’t really like it. I have heard that all these do well in the heat; Armenian Cucumbers, Eggplant, Corn, Beans, Edamame, Muskmelon, but have not tried them. There has to be more.
