Pimiento Cheese Spread, Dip or Smear
Being from the West Coast, I had no idea that Pimiento Cheese was such a popular food item in the South… The popularity of Pimiento Cheese in the South is right up there with Sweet Tea and Shrimp & Grits…
Basic Pimiento Cheese is just Sharp Cheddar Cheese, Mayonaise & Pimientos, mixed together… From there you can add else anything you like. Most Southerners have their own favorite recipe that often has been passed down from generation to generation.
When talking about your favorite Pimiento Cheese recipe you could get into quite a heated discussion, if you happen to bring up the topic in a room of Southerners, even the way Pimiento (Pimento) is spelled is a topic of debate.
I Used The Blender
Though not a common practice, I chose to use the blender to get a smoother version… Most Pimiento Cheese is lumpy and bumpy,,, You don’t have to use a blender if you would rather have a more authentic looking version,but plan to stir it well.
How To Use Pimiento Cheese
- A Vegetable Dip
- A Chip Dip
- A Sandwich Spread
- On eggs
Almost Southern Pimiento Cheese
- 8oz Cream Cheese
- 2 cups loosely packed grated Cheddar Cheese
- 4 oz diced Pimientos
- 1 cup Mayo
- 2 tsp Mustard
- 1 tsp Horseradish
- Put all ingredients in a Chopper or a Blender, blend until smooth. (Unless you would prefer chunky, then just stir everything well.)
Spoon over any food you think that it would be good on because it probably will. Refrigerate any leftover Pimiento Cheese. Enjoy!
