Butternut Squash Hash Browns
Easy to make, Delicious and healthy… Lower in carbohydrates than White Potatoes, high in Carotene, Vitamins, Minerals, and Antioxidants, making them good for you too. They are delicious but don’t expect them to taste like White Potato Hash Browns, they have a delicious sweetness all their own…
Butternut Squash The Garden Harvest
We grew Butternut Squash this year, for some that might not seem like much, but I have tried before and didn’t think that I could get them to grow. It seems that Butternut Squash likes growing in the Arizona heat so long as it gets lots of water… We invested in sprinklers and watered about 1 hour every other day, which may have been overkill… But it worked. The Butternut Squash grew like weeds, granted they are smaller than the ones we get at the grocery store but I love having them, they are organic and homegrown…
Prepare The Squash
Start by washing and peeling the Squash. I have found that peeling Butternut Squash is easier using a Y-Peeler like the one in the picture below… A sharp knife will work too.
Cut Squash In Half
To get all you can from your Squash, cut it in half the long way and remove the seeds before you grate it…
Grate The Squash
If you have very small Butternut Squash you can skip that step and just stop grating when you get to the seed section. That is what I chose to do it was quicker and the seed walls were pretty thin anyway.
Add The Eggs
While hash browns are usually just grated potatoes, Butternut Squash Hash Browns do not stick together like White Potatoes. So to help them I have added a whole egg or two. I hand beat the egg then add the grated Squash, Salt & Pepper & mixed it all together… The egg adds a flavor profile that Butternut Squash would not have on its own… It kind of reminds me of fried Zucchini or something fried in an egg wash, I like it.

Hash Browns are typically thought of as a breakfast food, it was my first inclination to have them for breakfast and they tasted great with my Eggs… They would be just as delicious anytime…

Delicious & Easy Butternut Squash Hash Browns
- 3 – 6 cups Butternut Squash – Peeled and Grated
- 1 – 2 Eggs
- 4 tbsp. Coconut Oil or Other Fat, use more if needed
- Salt & Pepper to taste
- Wash, peel and grate Butternut Squash.
- In a bowl break eggs, hand mix eggs then add the grated Squash, salt & pepper, mix well.
- Heat a frying pan to medium & add Coconut oil.
- Add grated Squash to the hot pan and fry till Squash gets crispy on the bottom, then turn to other side and do the same.
- Add Salt & Pepper to taste.
