Attractive & Easy to Read
One of the first things that I noticed was that the book was laid out in a visually appealing manner, the images were warm and inviting, and the recipes were easy to follow. While I do not normally read cookbooks from cover to cover, I found that reading it was not as boring as I had expected. Not only was it not boring, the book set me on the path to learning more about baking with Natural Yeasts.
While this book was designed to be used as a stand-alone cookbook, it actually is a sequel to Melissa’s 1st cookbook “The Art of Baking with Natural Yeast“, co-authored with Caleb Warnock. The Art of Baking with Natural Yeast digs deeper into the reasons and benefits of baking with Natural Yeasts, where “Beyond Basics with Natural Yeasts“, gives us more recipes or tools for improving our health through the preparation of foods using Natural Yeasts.
While reading Beyond Basics, I noticed that baking with Natural Yeasts seemed to be important, but what I did not realize while I was reading the book was the depth and importance of using Natural Yeasts… The recipes include things that are not normally leavened with yeast, such as pancakes & muffins, which in my mind is great, I dislike the taste of baking powder in my baked goods and have used yeasts instead myself. The benefits of baking with Natural Yeasts was touched on but we were refereed back to the first book as being the authority on the concept. Beyond Basics is not only a great cookbook for baking with natural yeast, it gave me the motivation to look for more information on the benefits and reasons for baking with Natural Yeasts. It did not take long to find what I was looking for, Melissa gives classes on baking with natural yeasts and some of her classes were recorded and can be found on YouTube.
Have You Noticed?
Maybe like me you have noticed that more and more people are saying that eating wheat is bad for you, and every day you probably hear or read something about avoiding gluten. Is it just me or does it seem that more and more foods are becoming gluten free.
The Staff of Life
Something that bothered me and Melissa is how could bread be the Staff of Life for some generations and be poison to another. Being the researcher that she is Melissa would not let that go unanswered, through research and prayer she come to understand based on the science and the evidence she found was, we do not prepare our grains for bread making in the same way that our ancestors did. Because over the years and the industrial revolution we lost the art of making healthy bread that could sustain us.
Can Bread Sustain Life?
We were headed in the right direction when we stopped eating white bread, and switched to whole grains, but what we did not realize was our bodies were not designed to eat seeds for food…Our stomachs are not able to extract the nutrients from the seed, even cooking does not make the nutrients available.
All seeds have chemicals that prevent them from sprouting until the conditions are just right for their survival. These chemicals bind all the nutrition in the seed for the future plant, and only when the right conditions are met do they let down their guard and make the nutrients available for nourishing the seed and available to us to sustain and nourish our bodies.
But it even goes farther than that, when a seed is used for food and it has not let down its guard it not only holds onto the nutrients it contains, but it will take nutrients from you making you even more deficient that you were before eating the seed. It reminds me of what I learned about sugar, sugar does not have any nutrients of its own and to digest it your body will take nutrients that should be used for other things just to digest the sugar, leaving you more deficient too.
Somehow our ancestors figured out how to prepare the seeds or grains so that they release their nutrients making them available to nourish and sustain…Maybe without knowing why or how they made bread that sustained life.
With much research Melissa learned that our ancestors prepared their grains in a way that utilized Natural Yeasts, these Natural Yeasts somehow break down the seed and deactivates the chemicals that bind the seeds nutrients…
By employing Natural Yeast in her baking, Melissa has seen loved ones who are allergic to conventional baked bread, able to enjoy bread, again without allergic symptoms…
Caleb is also said to have been able to give up medications for stomach trouble and losing 70 lbs after switching to eating bread, made with Natural Yeasts.
